2 Pick-&-Joy Snack Cucumbers
10 Pick-&-Joy Cherry Tomatoes
150 g quinoa
100 g feta
1/2 red onion, finely chopped
1 handful of fresh parsley, finely chopped
2 tbsp olive oil
1 tbsp lemon juice
1 tsp honey
Salt and pepper to taste
Cook the quinoa according to the instructions on the package and let it cool. Slice the cucumbers, halve the cherry tomatoes, and chop the red onion.
Mix the olive oil with lemon juice, honey, salt, and pepper.
Combine all ingredients in a large bowl. Pour the dressing over and toss well to combine. Enjoy!
